I have a weak spot for shortbread biscuits. Mainly because they conjure up strong connotations of a cuppa tea, which I dip them into, without hesitation or shame.
You know they say you become more like your mother as you age. Well, maybe this explains why I find myself increasingly reminiscing and trying to recreate all of the things I grew up eating from her kitchen.
When I close my eyes and transport myself back home, the smell of fragrant biscuits being baked in the the oven embrace me like my mother's loving arms.
So I share with you a recipe which I love to make (almost as much as I love eating).
Ghribiya / Ghrebia is the Algerian and North African equivalent of shortbread biscuits, but are even easier to make as you don'd even need to roll the dough out, or cut them into shapes.
You only need three ingredients for the biscuit dough!
I guarantee this will be a hit with the family as they're the perfect feel-good afternoon tea (or latte) and biscuit treat.
My own twist on this recipe, which traditionally calls for sunflower oil, is to replace that with coconut oil. I kid you not, it takes it to the next level.
Give it a go!
IngredientsFlour: 3 cups
Icing sugar: 1 cup
Coconut Oil: 1 Cup
Cinnamon for dusting
Roll your sleeves up...
1. Pre-heat oven to 180C
2. Mix the flour and icing sugar together, then add the coconut oil.
3. Clump it together to form a ball of dough.
4. Pinch some dough and roll it into a small ball inbetween your hands and place it on the baking tray (This recipe can usualy give you 20 biscuits)
5. With your thumb, press a gentle indentation into the top of each biscuit.
6. Dust a tiny pinch of cinnamon in the center of each biscuit
7. Wack it in the oven for 12 minutes.
Enjoy.
